N\u00e9 le <strong>11 f\u00e9vrier 1926 \u00e0 Collonges-au-Mont-d\u2019Or<\/strong>, il est issu d\u2019une lign\u00e9e de cuisiniers passionn\u00e9s. De son apprentissage dans les grandes maisons fran\u00e7aises \u00e0 la cr\u00e9ation de son propre empire gastronomique, il a su \u00e9lever la cuisine au rang d\u2019art et faire de son nom une r\u00e9f\u00e9rence internationale.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><em>Les d\u00e9buts d\u2019un chef hors du commun<\/em><\/h2>\n\n\n\n<p>D\u00e8s son plus jeune \u00e2ge, Paul Bocuse se distingue par sa rigueur et son amour du m\u00e9tier. Il d\u00e9bute son apprentissage chez <strong>La M\u00e8re Brazier<\/strong>, une figure l\u00e9gendaire de la cuisine lyonnaise, avant de perfectionner son art dans des \u00e9tablissements renomm\u00e9s comme <strong>le restaurant Point \u00e0 Vienne<\/strong> ou <strong>Lucas Carton \u00e0 Paris<\/strong>.<br>En <strong>1958<\/strong>, il reprend l\u2019<strong>h\u00f4tel familial de Collonges-au-Mont-d\u2019Or<\/strong>, o\u00f9 il obtient dans la m\u00eame ann\u00e9e <strong>sa premi\u00e8re \u00e9toile au Guide Michelin<\/strong>. En <strong>1961<\/strong>, il re\u00e7oit le titre prestigieux de <strong>Meilleur Ouvrier de France<\/strong>, symbole de perfection artisanale.<br>Son restaurant d\u00e9croche <strong>deux \u00e9toiles en 1962<\/strong>, puis la <strong>troisi\u00e8me en 1965<\/strong>, une distinction qu\u2019il conservera sans interruption pendant plus de <strong>50 ans<\/strong> \u2014 un record historique !<br>En <strong>1989<\/strong>, le <strong>Guide Gault et Millau<\/strong> le proclame <em>\u00ab Pape de la gastronomie fran\u00e7aise \u00bb<\/em>, consacrant d\u00e9finitivement son influence dans le monde culinaire.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><em>Un h\u00e9ritage vivant<\/em><\/h2>\n\n\n\n<p>Passionn\u00e9 par la transmission des savoirs, Paul Bocuse fonde en <strong>1990 l\u2019Institut Paul Bocuse<\/strong>, devenu aujourd\u2019hui l\u2019<strong>Institut Lyfe<\/strong>, une \u00e9cole de r\u00e9f\u00e9rence internationale d\u00e9di\u00e9e aux m\u00e9tiers de la gastronomie et de l\u2019hospitalit\u00e9.<br>Il cr\u00e9e \u00e9galement la <strong>Fondation Paul Bocuse<\/strong> en 2004, pour soutenir les jeunes talents et pr\u00e9server l\u2019esprit de la cuisine fran\u00e7aise.<br>\u00c0 Lyon, son nom orne d\u00e9sormais les c\u00e9l\u00e8bres <strong>Halles Paul Bocuse<\/strong>, un lieu incontournable pour les amateurs de lyonnaises<\/strong>. Il y installe un <strong>orgue Limonaire<\/strong>, un instrument spectacul\u00e8re capable de reproduire l\u2019\u00e9quivalent de 110 musiciens.
